atural ayu fish from the Shimanto River caught by river fishermen.
The Shimanto River, surrounded by pristine mountains and rich in minerals, is a treasure trove of food for ayu, whose staple food is moss on stones.
Ayu from the Shimanto River is called “fragrant fish,” and when freshly caught, it smells like watermelon, and when you bite into it, the rich aroma of the river fills your mouth.
It is also characterized by its abundant movement and firm flesh.
In addition to the standard salted and grilled fish, you can enjoy it in a variety of ways, such as confit and paella.
It is brought to you frozen, so we recommend that you half-thaw it under running water to soften its surface a little, and then grill it slowly over charcoal.
